It is definitely possible to consider the Activity Tracking for logging the addition, modification and deletion from master files such as Item Kit Master.
Although, keep one thing in mind, when activating the Activity Tracking for this specific user, you will have to enable the "File Tracking" including either addition, modification or deletion of master files. This will track all the master files such as items, vendors, customers ...etc, not only kits.
I have worked on an Audit Requirement recently, I have covered this requirement in a different approach by utilizing the CDC feature on the SQL Server level, all the details that you need to know are illustrated on Audit Requirements for Dynamics GP
The table that you need to track changes on is "Item KIT master, IV00104"
