We are starting to use Word Templates to create documents from CRM. Some are generated through the Export to PDF button and some are generated through the Word Template button. I need to add /today's date/ to the document that will populate based on the date the document was generated - both in PDF and Word. Does anyone know the trick to get this done
If you insist on using Word's own functionality to get the document creation date, it is recommended that you seek more help in the Word forums. Welcome to the Word group! (microsoft.com)

The PDF is generated through Microsoft's "Export to PDF" functionality. It is a button in the ribbon that allows users to select a Word Template to export as a PDF file.
I was hoping to find a solution in the Word Template itself rather than creating new columns for each of the tables.

Can we check how you were going to create a PDF file in order for us to suggest on approach.
For populating the date and time on the word template, you can use the approach suggested by DengLiang.

You can add a calculated column to display the current date.
This column is then mapped in the Word template.
