I'm trying to create a customer journey which will set a task to email and set a phone call to a customer several times based on their response.
Do I need to assign the Email and phone number as part of a task (using a template), or should I just set the email and phone call (added to task list) to do so?

As per understanding, I would suggest the second approach.
Because in customer journey, it is not supported to assign an email to task dynamically.
