Does Dynamics 365 automatically know to not send Customer Journey's on National Holidays, or is there a way to turn them off during holidays without having to stop them all one-by-one?
No it doesn't know to turn off. There is a scheduler which you can set the period, e.g., afternoon 9 to 5, in which an email is delivered.
