Just inherited a D365 Sales environment, so on a steep learning curve...
For an Opportunity, there is a field "Practice Area" with a list of selection choices, as below:
How/where do I edit/redefine the choices?

Hi tleethorp,
open make.powerapps.com. Navigate to the solution. Search Default Solution and then open it.
Search table. Click on it. Search Lead and then Click on it
Click on Columns
Search Practice Area as it is not available in my environment so I am searching Address 1: Address Type. Click on it
If it is a local choice then the screen looks like something similar and from here you can start editing or redefining
If it is a global one then before editing you need to click on the edit choice
