Hi, I worked with Microsoft to resolve this issue. The issue was stemming from the scheduling settings in the Dynamics organization.
It was configured to use the ‘Universal Resource Scheduling’ option. I had updated to the Default Scheduling engine and was then able to see the appointments appearing in CRM.
- In Dynamics 365, navigate to the gear icon > advanced settings > Administration > System settings
- Select the Calendar tab > update the scheduling engine to default (not the "(Deprecated) Universal Resource Scheduling")

I tested it, and the appointment tracked from Outlook appears in D365.
