I know how to check the version and rollup, but don't see where I can identify if we are running standard or enterprise. How do I determine that?

Dynamics CRM On-Premise is available in CRM Server and CRM Workgroup Server editions.
Microsoft Dynamics CRM Server - There is no user limit for this edition. Additional features include support for multiple organizations, multiple server instances, and separate role-based service installation.
Microsoft Dynamics CRM Workgroup Server - This edition is limited to five, or fewer, users. This version is limited to a single organization and a single computer that is running Microsoft Dynamics CRM Server.
As Guido mentioned, you will get the below message when you try to add a new Organization in Workgroup Server edition.
And when you try to add a user after 5 CALs are utilized in workgroup server edition, the below message is displayed.

CRM doesn't have anything as Standard or Enterprise, I think you are interested in Windows Server or SQL.
For windows edition you can follow the way Flávia has mentioned and for SQL you need to open the SQL instance and right click->properties.

Do you mean Windows Server edition?
If so, you can follow this procedure on the server:
1. Start > Run
2. Type 'winver'
3. Press Enter and the information will be displayed.
