Does anyone know if D365 stores the date when a vendor's info (name, address, bank account etc) was created or modified?
I am trying to see if we can pull that info, so we can audit when vendor details are changed.

The addresses and organization name tables don't have all properties enabled for setting the dates and users. The vendor bank account table does have all created and modified fields enabled.
You can consider a table extenstion to enable these fields or get more details via the standard database logging feature.
The other option is that there is a new feature (in preview at the moment) for workflow on changes to Vendor bank accounts.
If you went with this then the need to track this might be removed.

VendTable itself has create and modified date time enabled. You can add it via personalization and check.
But for address and bank accounts as Andre mentioned you need a customization.
