It seems there is not possible to enable change tracking for Vendors V3?

We have the standard database log to track changes that have been made to vendors.
Your screenshot seems to be from a different area (data management). Can you thus explain what changes you want to track? I would assume that it has something to do with the vendor creation but please elaborate.

As far as I can say, your screenshot shows that change tracking can be enabled - simply press "Enable custom query".
If you have some kind of problem with it, please explain the problem to us, otherwise we can't help you.

This is standard entity that you can enable change tracking just for "Custom query". Please try activate this if you want to export this entity as incremental push export.
