Under the activities section on several of my entities (leads, contacts, accounts etc) I'm giving several options that I have no need for.
I want to hide 'chat' and 'text message' from the list above. Would anyone know a way of doing this?

It is not possible because when you check with chat and text message entity "Display as activity menu" is disabled.
Am i not sure below solution will work? Please take backup of that entity and do below customization
Try to export solution of that entity and edit customization.xml file in the entity setting check "Display as activity menu" as false and import that entity.

I believe you can't hide the activities from the list by any configuration. Please check the below link.
