We have an interesting issue where multiple users are being set as default under the same user for the approval hierarchy. Because of this when I try to set a different user as default and delete an existing user it just adds another user as default under that person.
From what I understand it should un-default the user at that same level when assigning a different user as default at the same level. It's not doing this.
