Is SL2011 FP1 supported on SQL SERVER 2008 R2 SP2?

Yes SL 2011 is supported for all SQL 2008 r2 and SQL 2012.
If you have a Microsoft Service Plan, and have a Customer Source login you can go to the following site for the system requirements guide:

In both the documentation you've linked and the following KB article:

There is no specific mention of SQL 2008 R2 SP2 support with Dynamics SL2011. Can you please confirm that it is definitely supported as both the document and the KB article predate the SP2 release?

Yes we do support all service packs available for SQL 2008, 2008 R2, and SQL 2012 to work with SL 2011, 2011 sp1, and 2011 fp1.
