I have a model driven app and i have a form that the requestor fills out, and there are 3 permission levels. And for each level, I want an email sent to the approver. Is it better to create these emails via workflow or with power automate (modern flow) and why? Thanks.
I would suggest powerautomate flows for this, you can specify send as another user or use a single user to send emails.
The whole exchange setup between different environments is troublesome, sometime email wouldn't send out just because that specific User's mailbox is not enabled.

Few things why I would recommend using Power Automate over Workflows:
1. Workflows are leftover from the ancient infrastructure of automation and eventually those will go away. So it's safer to use Power Automate for that purpose.
2. In order to send emails from Dynamics it would be required for you to configure Server-to-Server integration between Dynamics and Exchange and keep it running (and sometimes it's not stable from my memory). In Power Automate you will have to configure the connection to Exchange or use Send Email and use built-in delivery system.
