I have an Opportunity record. When this record is closed as won, I need it to update that status field on a record from an entity that is below the Opportunity entity, called Sales Incentive. I can grab the status from the Opportunity record and have it update the sales incentive record when the sales incentive record is first created, but after that I can't get it to update. Any help is appreciated.

I would use workflow distribution tool for that:
just follow the steps to activate it in your environment. (The name is still 2011 but it works in 2016.)
It will allow you to trigger a child workflow for each existing relationship on a parent.
For online versions I would use MS flow for this.
I would like to do this via a workflow. So on the Opportunity record (which sits above this other entity) has a field on the form called, "Status Reason." When the Opportunity Record is created it puts the Status Reason field to "Active" along with setting the Pipeline Phase to a certain value. Now if I click on the "Close As Won" button from the ribbon on this opportunity record, I want the status on this other record from this other entity to get updated. So basically anytime Opportunity Status Reason field is changed, I need the Sales Incentive Record status to get updated with the same value.
