Hi, so as the title suggests I had set a customer journey as non recurring to begin 12/1/19 and end 12/31/19. I take a look at it on 1/1/20 and the customer journey automatically resent the marketing emails with the updated parameters even without being set. How and why did this happen??

If a journey was set as non recurring, then emails should not be sent automatically to the same contacts within this journey.
Could you please share your organization, journey and email details (ideally IDs visible at the end of their URLs) so that we can investigate this issue? You can send me a private message with the details.
