Hi,
I can see a data entity in the environment, but I can't find it in Dataverse to be able to pull into Power Apps. The Can anyone please advise?

Can you please confirm whether Dataverse configuration is ON?
When you go to Power app then did you select the correct environment ?
If all setup correctly, can you verify whether Virtual entity configured for HR environment? If yes then you must see entity in Dataverse like below. If no then you have to configure virtual entity first.

I can confirm that Dataverse configuration is on and that the correct environment is selected in Power Apps. I'm not sure what you mean by Virtual entity sorry- mine looks like this?
The virtual entity configuration is OFF. You must enable first then you can see entity in Dataverse. Not all entities are available in the Dataverse but when you enable Virtual entity then you can all most of the entities in the dataverse.
To enable VE configuration. Please check below documentation link

I have enabled VE but there entity is still not showing in Dataverse...
Did you see entity in Virtual tables in Dataverse configuration?
If no then generate or refresh.
