A B Tests- I have tried Full Content and Email Body Settings to set up A/B Tests for color Neither of these seem to work. Any Suggestions?

I tested Full Content and it works successfully.
Have you checked whether frame color between two marketing emails is different?
According to step 4 from Create a marketing email for A/B testing section of documentation:
"For body tests, each element being tested shows a colored frame around it (when selected) that matches the color of the version button you have selected (blue for Version A or pink for Version B )."
Also, please read the third point of step 5.
"For body tests, add an element to the test by selecting it on the canvas to highlight it and then select the A/B button in the tab at the top of the highlighted frame.
This is a toggle button, so you can select it again to remove an element from the test—it shows a white background for elements being tested, and shows a dark-blue background
for elements that are the same for each version."
We can toggle element to version A/B by clicking the A/B button.
Test:
After customer journey has been gone live, we can see there is A/B Test in progress when opened marketing email, text color are different between email A and B.
The text color of delivered email to my two test contacts are different
