When adding holidays to a calendar the holidays still have working times according to what's set up as default. Is it possible to make resource scheduling respect holidays or do I have to manually remove the working times on dates that have a status as holiday?

Unfortunately, there is no relationship of holiday in HR module and calendar linked to resource PMA.
If you need this to update, you have to either need to do some customization or manually update the calendar of each resource.
