Is there any best practice for making corrections to the VAT return after the month end has closed (for the VAT return being submitted and needs a correction) and the previous months' numbers have been reported / submitted?

I am also trying to understand how the adjustment would be processed with MTD setup, did you get any further with this question?

Yes, in order to post on a period, the period must be open - this applies also to sales tax settle and post.

I understand that to post corrections, I will still need to open prior periods for posting and change the numbers. Correct?
if that is the case, then that does not help in this scenario.
Maybe it is not possible but just wanted to confirm.

User is able Settle and post (Latest corrections) after the Original Sales tax payment is posted:
User is then able to Report sales tax for settlement period with following alternatives:
Here either the Corrections or Total list which is the Original + Correction.
If Include corrections is set to Yes, then transactions posted after the Original sales tax payment version is posted, are reported on the next reporting period.
