I'm looking for a way to export the entire vendor listing including the adresses.

Hi Heleen,
You can use the 'Open in Excel' button at the right-top corner to open the vendor details in Excel. With the embedded Dynamics connector, you can design which columns should appear in Excel. You can also refresh the data.
Note that a normal business user should have explicit permissions on the data entity used for the 'Open in Excel' option.

We're looking to export a vendor list (from all vendors in the finance & operations module).
This listing will include the supplier number, the name and the country of the primary address.
If the entire address is included, this is also fine, but for reportingpurposes we need only the country.

A vendor can have multiple address records.
Which one do you want to export and why?
Do you make use of a separate address purpose type that you are looking for?
