What features of GP 10 do I have to have Office 2007 in order to use?

None that I am aware of.
Both V9 and V10 GP support office 2007, 2003 and XP. V9 also supports office 2000.
In V10 GP, you will need the compatibility pack for 2007, if you are running office 2003.

None. Office 2003 and Office 2007 are fully supported.
If you want to use Excel Reports, you will need the Office 2007 compatibility pack.
If you use Analysis Cubes, Excel 2007 works better than Excel 2003.
Other than the above items, feel free to wait until the next version of Office. I believe there will be some features in the new version that GP 11 takes advantage of. That was a general comment I heard. I don't have any specifics.
You can add the sharepoint data connections to Outlook 2003 as well?
