IS there anyway to use a workflow to lock down a field after a record is created? I understand i can change the status of the record, but that won't work. JScript is not an option here. I am using CRM 2011. thanks

Its not possible via workflow, what cant you use JScript?
If you do not want to write Javascript you might like to try N52 formula manager which has the 'DisableFields' function - support.north52.com/.../153900-n52-formula-manager-functions-client-side
