Tracking forwarded email using the original sender as the customer/contact

Would like to ask if what we are looking to do is possible and how.
 
We will receive emails in Outlook as forwarded email. Being a forwarded email, the sender is no longer the original sender.
When we track the email in Dynamics, the email is tracked using the address that forwards it, usually a generic email address as the  Customer.
We then create the original sender as a Contact in Dynamics and update the email tracking information.
This creates extra steps for the users. The users are asking if it can be automated, like when they track an email that comes from the generic email address, use the original sender as the customer.
 
Any ideas how it can be done?
