Editing an Email Message Field

Is there any way to customize the fields in the email message? I just set up Dynamics GP to be able to generate EFT payments and email remittances to vendors, but when I set up the generic email message that gets sent to vendors, one of the message fields isn't in the format that I want. When I choose the field check amount, the format is like this, 2379.80000. I want it to look like $2379.80. Is there any way to edit the format of this field to look like that?
