Sync CRM Online contacts with Exchange Online (Office 365) Contacts not working

We are in the process of piloting CRM Online, and we've got CRM Online (2016) setup to do full server-side syncing (not CRM for Outlook application syncing) with our Exchange online server (part of Office 365).

I've imported a bunch of contacts into CRM Online, and voila, they magically now appear in Exchange Online (Office 365) "My Contacts". So far so good.

However, when I delete a contact from CRM Online - the contact in Exchange Online remains. If this is a sync relationship, I would expect it to be deleted from EOL/O365 but it isn't,  or at least it hasn't in over a half hour of waiting.

This seems like an enormous problem if that's how this works - since over time we will accumulate tons of outdated/irrelevant contacts orphaned in Exchange.

Can anyone suggest what we might have wrong with our setup?

    I've never done a sync like this. Are you sure it's not just a one-way import?

    A solution could be to programmatically remove the exchange contact on a Delete message of a Contact entity in CRM.

    Yes, I'm sure - it's called "Server sync" and  it's pretty well-documented in setup. It's in CRM "System Settings->Email" under "Configure default synchronization method" for "Appointments, Contacts and Tasks", and we're set to "Server-side synchronization" which is how the contacts wound up synced to Exchange Online in the first place. It wasn't an import.
