Deleting or Hiding Icons from Activity Entity

I'm just wondering how I would go about deleting/hiding any icons that are located at that top of my activity entity. The current choices are task, email, appointment, phone call, letter, fax and service activity.

I can't seem to find it anywhere in the solution customization feature for the CRM itself, wondering if I'm missing something?

You can hide the Command Bar buttons by editing the RibbonXML. You can use the below tool to do that

ribbonworkbench.uservoice.com/.../80806-download-ribbon-workbench-for-crm-2011-2013-2015

Once you open your solution in the Ribbon workbench, for activitypointer entity, right click on teh button that you want to hide and select 'hide button'

I was hoping the answer wasn't using the RibbonXML... as I have had trouble getting this to work in the past..

RibbonWorkbench is an excellent tool that simplifies editing the RibbonXML., Try using it

Everytime I try to import the Ribbon Workbench it never works when I go to use it.. :(

For working with the menu options in an Entity you would need to modify the entity Ribbon in CRM. Below is an MSDN link to start with.
