I have wondered about this before, but it has come up again so I decided to ask the experts. None of my databases have tables GL11110 or GL11111. Why do I not have those tables and is there a way to add them?

Those are not TABLES.. but SQL VIEWS.
Please check under SQL Studio Management (or Excel Query) within 'Views' objects.. you should find them there.
If they were dropped accidentaly, they can be re-created with GP Maintenance utilitity.
Do you have the TWO(Fabrikam) company loaded? If so, look in there. If not, go ahead and create it. They should be in there. Use SQL to create the scripts to create these views. These views were probably dropped from your original company and then that company was used to create other companies so they were missing from those companies as well.
That is what I had decided - that they don't exist. They are in the "table names" chart within GP. I thought possibly they were in GP at some point and then deleted and never removed from the table names chart. But I just ran across a post by Leslie Vail from Feb 2017 in which she provided a script written by Victoria Yudin that pulls the majority of information from GL11111. The two tables are also listed on Victoria's website as summary views. She states to use these instead of GL10110 and GL10111 because they include the descriptions.
There are no such tables in GP. I believe you mean GL10110 and GL10111. These are the GL Account summary and GL Account Detail tables.
