There is no reason not to start using 2008 from the get-go.

That is actually the preferred way of doing the update.
There is probably a better upgrade proceedure, but the way I did this was to export a .bck file through so manager, remove sql2000, install 2008 with same instance name (mssqlserver).
I used mixed mode so I can still use the sa password, but there is probably some security risk, then installed backward compatability from the feature pack, then restore the .bck file through the so manager again.
