Hi there,
I am trying to figure out why I have to download the D365 add-in almost every day. Is there something I can check? I have search in the community
but anything match with this same issue.

It merely got hidden in the Excel ribbon. For Excel on Windows, to get to the add-in again, Insert > My Add-ins > Recently Used Add-ins > Microsoft Dynamics. Then the Dynamics Add-In panel pops up on the right.

Can you elaborate on your exact issue? Do you have an existing Excel file which was created before where the connector disappears? In that case, you have to download a new file from F&O. Or when you perform a new 'Open in Excel' action, you have to download the add-in from the Store again?
If it is the first case, please prevent closing the Dynamics 365 connector pane.
If it is the last case, then check with the system administrators in your company if there is a policy in place which causes this issue.
