I'm working for a Microsoft partner. Our products are for the retail industry. I was wondering, can I create a custom accelerator on CDS?
If it is possible, where can I start to do that?

You can certainly build an accelerator and publish it to app source as a partner offering. The core of this is really just building out the entities in a model driven PowerApp:
