I would like to use a workflow to generate documents on my CRM system.
Scenario:
Several quotes require different letters generating and the templates already exist in CRM. Currently someone needs to go into each individual quote, check which letter they need and print it out. With a large number of customers this can take along time.
I would like to run a workflow which checks conditions and generates the templates for all the records that meet the criteria.
Is this possible and if so how?

Going by the tags of your post, you listed CRM 2011. Unfortunately there is no such option out-of-the-box for CRM 2011.
There are third-party add-ons that add such support, like this one: http://www.mscrm-addons.com/Products/DocumentsCorePack

For CRM 2016 and Dynamics 365 however (v8 and v9) this functionality is how included!
You can use the new Word template mechanism to create a template and use it in a Workflow:
