Small query.
One of the user has left the company and his account is disabled.
Now, whatever notes he has created early, will it directly assigned to his manger?

Was his AD account disabled or also his CRM account?
I would recommend using the Reassign Records feature in the user record.
If the record has already been deactivated, reenable it (and if necessary AD), and reassign all the records owned by this user to his manager (unless this is not what you are looking for).
If you need to just reassign individual records, you can do that using the Assign button for those records.

Disabled users historical records always remain intact. Yes, we do have an option to reassign them if we desired.
If the user is Disabled, just do an advanced find and search for the records owner ='XYZ' and then select all and assign it to another user.

This can be possible using relationship behavior , you need to change the owner of the record so note will be automatically assiged to the new owner of the record.
