Do you have any idea on how to create the purchase order automatically, when an item qty < safetystock?

You could possibly create a workflow from the Product Inventory record where the quantity is less than safety stock. Although I do remember that workflows dont fire on update of Product Invnetory stock fields, maybe one of the Microsoft guys might be able to confirm that
