Hi Tume,
Since it is unclear whether you want to prevent all emails and appointments being tracked automatically to Dynamics, or to prevent some specific emails and appointments being tracked to Dynamics, I have two solutions to solve this problem.
1.Prevent all emails and appointments being tracked automatically to Dynamics.
Step 1: Go to Settings > Email Configuration. Select Mailboxes.
Step 2: In My Active Mailboxes, click an enable mailbox you want to prevent be tracking.
Step 3: Set None to Incoming Email, Outgoing Email and Appointments, Contacts, and Tasks. And then save.
2.Prevent some specific emails and appointments being tracked automatically to Dynamics.
Step 1: Click on the settings symbol in the upper right corner, and then choose Personal Options.
Step 2: In the Select the email messages to track in Dynamics 365 for Customer Engagement section, in the Track list, select one of the following options.
