Since you are using the Online version, there is NO way for you to get to the SITE entity for any useful customization.
However, I am curious as to why you want to edit the site entity.
If you want to configure/edit the SiteMap, use the SiteMap editor from the XRM ToolBox.
In general, you should be able to find any entity by going to Settings -> Customizations -> Customize the System.
This will open the Default Solution, and Expand the Entities Tree, and Scroll down until you see the entity that you are looking for.
However, the Site Entity only provides limited ability for Customization, so I don't think you will be able to do it.

There is no such type of entity available in Dynamics CRM.
However for onpremise environment you can retrieve organization table. Have a look below reference -

But as you are online there is no way you can access database directly , so its not possible for online to access Organization table .
