As the title says, whenever I go to Service > Activities the first thing I see is 'My Activities' and I manually have to go to Email and then All Emails. Is there a way to set 'All Emails' as the default thing that comes up whenever I go to Activities?

You cannot directly set the built-in All Emails view as the default view.
What you can is the below:
1. Open Customization > Customize the System
2. Go to Activity Entity > Views
3. Create new system view and call it "All Emails"
4. Change the filter criteria of this view and add "Activity Type = Email". Save and Close the View.
5. In the Views list, select the new View created in step 4
6. In the header, select "More Options" > Set Default
7. Publish all your customization
8. Reopen your CRM
