Could anybody point me in the direction of some live dynamics 365 portal that have been customised to look nothing like the out of the box portals generally do.

In the Portals you are free to create completely unique templates and show most of the data from CRM in any way you want. So any design you can image is possible.
There are some restrictions with entity forms to change/create the data in CRM - but they are as well highly customizable.
And as hint - you can google something like "microsoftcrmportals.com" (https://www.google.com/search?q=site:microsoftcrmportals.com) - it will show you some portals which probably in development phase but got into the search index.
