How to save text in a log separate to the initial field it is placed within ?

I have a requirement whereby there is a field in my dynamics instance that is populated by users to provide an update. We would need users to be able to provide an update in this field and then when a new update is placed in the field the old one disappears but is place in a log else where within dynamics and the new update of text displays.
