Dear All,
I tried to create a Marketing List following Microsoft Docs and I juste have some questions regarding static & dynamic marketing lists:
1. Static Marketing List: The field Subscription is set to False & it is locked when Targeted At = Accounts. I suppose it's because we can target accounts but only contacts can subscribe. Otherwise the field is unlocked. Right?
2. Dynamic Marketing List: The field Subscription is always set to False & locked. Is there any reason for that?
3. Is it possible to create a segment from a dynamic Marketing List? I tried from a static marketing list and it works perfectly, but from a dynamic marketing list, the members doesn't show in the segment.

a few points here:
First, if we have managed to resolve your initial issues in this thread, can you mark the answers as verified. It does help the community and the motivation others have to help you. Otherwise, it is just a moving target and could get confusing and demotivating.
Secondly,
From a technical point of view, the fields being present on the form has no interdependence on what fields you could use in a segment.
From a usability point of view, if your field is not on the form end users might not be able to populate it, so might just be blank, which is not a great segment criteria. Maybe that's where the guys trying to help you before were going with their answer.
This is not the case with Owner as this is populated automatically in D365.
Lastly, can you make sure your D365 Marketing is up to date with the 2019 Wave 2 Updates. Looking at your screenshots, I am not convinced you are using the latest version.
On the latest version Owner is a lookup as per screenshot.

Thank you very much! Your help is very appreciated. I found the right field for Account Name but I still have problems with other fields.
I have the field ''Owner'' in the heading of Contact form, and when I put it in my segment, it doesn't show the lookup. Is it true that since the Segments are based on Contacts, only the lookup fields from a contact (that are present on the form) can be used in the queries? This was the answer I got when I opened a case within Microsoft...
If this is the case, removing the owner from the heading to the contact form should resolve my problem for Contacts? And from the other entities, there may not be a solution?

I get where your confusion is coming from.
So as per your screenshot your data model is like this - You have an AccountName STRING field on the Account and AccountName Lookup on Contact. The ones circled with Pink are entities.
As per your screenshot, you are referencing the String field from the Account entity, not the Lookup one on the Contact.

Here is the picture. The field Account Name is a lookup field on Contact form, but the lookup doesn't show in my segment, I have to type it.

Account Name is a string. Account is a look up - see screenshot.
