Is it possible to add Customer Assets to Quotes in Field Service? And preferable more than 1 Customer Asset. This would then make it possible to add Labour and Products to the Customer Asset when building a quote.

We are usually recommending to use the Work Order with linestatus "estimated" for the products and services here.
Knowing that this is a deficiency of MS, you could also try to customize the Quote as to your needs, i.e. populate needed data from Quote into a Work Order.
