I have a prod environment and a dev environment where I obviously make the changes in the dev and export the solution to the prod env.
However I need to make some changes to some email templates, but I'm not quite sure how I should export them.
It does not look like the email templates are directly connected to the solution though, but I can see them through the model driven app

You should click on Add Existing button from your first screenshot to add Email Template which you want to export and import it into Prod.
Whatever you see on Model Driven apps will be only available in Default Solution. But it will only be available in New solution only when you add it using add existing.

Not sure I understand your question but you can modify email template directly by opening email template with in CRM interface and do your changes, once you are done you can include here using existing button and export it to take to prod.
