What OS can I use for a new server. Right now I'm using sbs 2003. I'd like to stick with a desktop os (i.e Windows 7). I only run 2 registers and the backoffice server. The pos stations are XP pro. I don't think I need a full blown server in the backoffice.

We sell Windows 7 Pro 64 bit all the time for "servers".
An i3 with 6 gig of RAM with SQL Server 2008 R2 Express is our starting point.
