I would like to ask if there are datasets to practice and prepare demos to customers that show the "Intelligence" capabilities of Customer Insights? like for example CLTV? Thanks a lot for any suggestion or pointer.

Yes, the datasets we use for the Customer Insights training are usable for the models. If you are a Microsoft partner then you can get the class materials from https://aka.ms/cipartner in the "Drive Readiness" section, below training.
You can also sign up for a trial with Customer Insights that can include demo data dynamics.microsoft.com/.../
