When I attempt to create an invoice in the "Invoice and Memo" screen, the description field only allows 30 characters. This limitation does not allow for much information to be conveyed to the customer. Is there any way to increase this character limit?

Sorry, there is not a way to increase a field size in SL due to the way SL programs are created with a "view" of the data record.
You could utilize the note field on the document and then customize the statement to include the contents of the note field. If you conditionally display the note field such that it is hidden if there is no note, the statement would not burn space when there is no note.
