I have an existing Sharepoint 2010 Farm in place (1 SP server and 1 SQL Server) and would like to install Business Portal for the first time. I'd prefer to have BP installed on a different SP server in the farm rather than place it on the same main SP server. I heard that we may have to install BP on every server in the farm regardless of which server it is located on. Is this true?

In a farm configuration you have the option to install BP on more than one server, but it's not required. In a standalone configuration you can only use one webserver.
The accounts you setup are the biggest consideration. Starting in Chapter 6 of the BusinessPortalInstallation.pdf document they discuss what is required of this.
