Hi Shahbaz,
You can remove the Multipleselect option from customisation.
Go to setting-> customisation-> select the fields which is in lead entity and go to details tab.

I have pretty much the same question as you. Working with a multi-select list and I want to remove the "select all" option but I don't see a configuration way to do that in the customization fields for the entity either.
