I have an issue that is driving me crazy with our D365. On Opportunity form, we have a quick view form for Contact w/ Phone and Email. When I'm on a Opportunity and click the Phone icon next to the phone number, a Phone call quick form opens. But when I click the Email icon next to the email address, it launches an Outlook email outside my CRM. Is it possible to have the icon launch an Email quick form instead so I can save for later it or send it out of CRM and not from Outlook?

This is OOB behaviour and it can not be customized.
You can utilize timeline to create Email, which can open email form in CRM.
The 'contact' can be filled in 'To' field automatically after clicking it in timeline.
If you want to open 'Quick create form', you need create a new 'Quick Create Form' for the email, and add the form to the app you are using.
Go Settings > Customizations > Customize the system > Entities > Email > Forms to create new.
