Is there a way for enabling a subgrid on the case record before the case record is saved? I want to first add the subgrid records and then save the record.

I'm afraid there isn't. The problem is adding records via the out of box subgrid relies on the Id of the current record which has not been currently generated. You're talking about custom development to implement something like this.
