Data Exchange Definition Not Used for Payment Export

We have a client setup with two separate companies - one Australia and one New Zealand. Bank Account in each company setup for Payment Export with custom Data Exchange Definition to match the bank file requirements. Australia works as designed. New Zealand exports with the layout defined for Australia (ABA Australia format), not New Zealand . Any ideas what we are missing?
