I am upgrading to v2.0 in the next week. I currently have a 4 lane, 9 lane, and 1 lane store. Since v2.0 has the licenses rather than the dongle, it is possible to "change" my stores to a 6 lane, 7 lane, and 1 lane?

What version are you upgrading from? If you're covered by a current plan (check with your reseller), you should be able to upgrade for a minimum outlay and you'll be able to request product ID's for as many lanes as you need. It won't be necessary to explain which store they're for- you'll just end up with an overall total of product keys which will then require activation.
